EXTRACTION

Distillation under reduced pressure and at low temperature allows the extraction of the plants water and intrinsic odorous compounds widthout adding water.

These conditions guarantee a very low level of oxidation of the distillate and allows to obtain a water with particular properties.

Distillation of Yuzu (Citrus junos)

Lowering the pressure in the distiller allows to lower the water boiling point and therefore to achieve a low enough distillation temperatures to preserve the active compounds of the plant.

Reduced pressure also means reduced presence of oxygen and therefore minimal oxidation of the products obtained.

A typical distillation is running at a pressure of -98MPa (substantially vacuum) and temperatures between 30 and 40 ° C.
